Ultimate Breakfast Salsa recipe

Breakfast salsa is my bold declaration that salsa just ain’t for tacos. The tastiest healthy sauce ever does wonders on eggs. It was a culinary epiphany I didn’t make until a trip to Mexico in my 20s and soon discovered that any request for hot sauce, even on a very gringo plate of bacon, eggs and toast, would be met with a bowl of salsa. And I have been reaching for salsa at breakfast ever since.

Up until now I have been content reaching for a jar of leftover homemade salsa for breakfast. But on this particular day I was all out and found myself forced to make a batch that morning. Lo and behold I would end up making the Ultimate Breakfast Salsa.


  • 2 tomatillos
  • 1 clove garlic
  • 2 chile de arbol
  • 1/4 of white onion sliced

  • immersion blender or full size for a large batch

If you haven’t seen it by now let me clarify: I make small batches of salsa. They don’t keep indefinitely and it is the time of Corona while I write this so I’m stretching my groceries as much as possible. Please feel free to double or really triple, quadruple etc if you have more mouths to feed.

Look closely in the background and you will see a plate of fried bacon. That was the game changer and why I call this the Ultimate Breakfast Salsa. Typically I broil or grill my salsa ingredients till they develop a slight char. But on this day, since I had some rendered bacon fat in my cast iron skillet, I charred up the tomatillo, garlic, onion and chile arbol in that pan. Game Changer that became Game Over.

Once those ingredients develop the char they go straight into my immersion blender. Even making the ultimate breakfast salsa is as easy as making any fresh salsa. Give it a good blend . . .

And the breakfast salsa magic begins to take hold. Remember there is hints of bacon there. Does homemade sauce making get more awesome?

The finished salsa should look something like this. Tomatillos are tart so unlike my Tomato Arbol salsa, I don’t add any vinegar but should you desire a thinner salsa, add water a teaspoon at a time for desired consistency. As always add salt to taste.

And that is my ultimate breakfast salsa on my equally ultimate breakfast torta. If you’re curious, you are looking at a Bolillo roll dressed with mayo, arugula, refried beans, bacon, a fried duck egg and that salsa.

Yes, I skipped lunch.
